I feel I should start by saying I’m a single dad. It’s a struggle to balance my work with my children’s needs. Too many days per week, I’m ordering takeout pizza, as it’s the best I can do. I’m not much of a cook. In fact, the only thing I seem able to do is to heat up soup or make a boxed pasta. I know it’s not nutritious, but I struggle with anything more complex.
My son’s eighth birthday was approaching and he asked if I could make cupcakes. I knew there was no way, so I offered to buy some instead. I could see the hurt in his eyes, and it broke my heart. As I didn’t want to disappoint him, so I tried my best and ended up making cupcakes that were as hard as rocks.
I made a promise to him that for his ninth birthday, I would have homemade cupcakes that were better than a bakery’s. It became my personal goal to find someone to teach me how to bake so after I got myself a kitchenaid stand mixer, I started googling for baking schools near Delhi.
I am so lucky to have found the very understanding Kirty at TruffleNation. I signed up for Baking for Beginners and was delighted when Kirty arranged her class times around my busy schedule. I also appreciated that the classes were private, so I could take them without anyone finding out and spoiling the surprise I’d planned for my son.
I Surprised Myself
Kirty wasn’t much older than my son when she started baking, so she has plenty of experience already. Despite having to deal with a kitchen failure like I am, she took plenty of time to break baking down. I never felt confused or left behind. I was really happy that her classes gave me one-on-one time to ask questions and get clarification on things I didn’t understand the first time.
Her classes started out with the basics like understanding baking terms, the processes used, and the equipment you need. I soon found myself understanding the difference between whipping and folding. The more time I spent learning at Truffle Nation, the more comfortable I felt in the kitchen.
One of my very first baking projects was vanilla butter cookies. It seemed so challenging at first, but she guided me through the process and helped me when I had questions. By the end of class, I had some delicious cookies to bring home. My kids didn’t believe that I’d made them. I had to pull out the e-book I received as part of the class to make them with my kids before they trusted that I’d made them. The smiles on their faces made me feel incredible pride.

As the classes continued, I made so many great desserts. I made a decadent chocolate pudding, semolina cakes, and advanced to my goal – cupcakes! The vanilla cupcakes turned out great. So great in fact that I immediately signed up for Truffle Nation’s Cupcakes and Muffins class.
My Overall Feelings
I’m so happy I signed up for Baking for Beginners. I learned a lot and now have confidence in the kitchen. My son is going to love the cupcakes I make for his birthday. I’m already planning to do a mix of chocolate and vanilla cupcakes, as he loves both.
Her expertise and patience made her an excellent teacher. I have to thank Truffle Nation and Kirty for taking a complete novice and turning him into a satisfactory baker. I won’t say I’m an expert yet, but after some more classes at Truffle Nation, I bet I will be!
